Veggie Shepherd’s pie

This filling shepherd’s pie (or should it be allotmenter’s pie?) makes good use of the seasonal fayre, with a tasty potato and turnip mashed topping.

Recipe serves 2

  • 60g green lentils rinsed
  • 1/2 white onion finely chopped
  • 1 clove of smoked garlic crushed
  • 1/2 leek, finely chopped
  • 1 small carrot peeled and chopped into small pieces
  • 1 small parsnip peeled and chopped into small pieces
  • 1 veg stock pot
  • 1 tbsp brown sauce
  • 4/5 tomatoes chopped (or halved and grated if you don’t like the skins)
  • 1 bay leaf
  • 2 tsp chopped fresh thyme
  • 2 small turnips peeled and chopped into quarters
  • 2 large potatoes peeled and chunked
  • 60g cheddar cheese
