The name Wobbly Bottom may be familiar to you if you frequent St Albans’ farmer’s market as they regularly sell their own goats cheese there, produced not far from Hitchin. The grass their goats feed on is exceptionally sweet, meaning their cheese has a beautifully mild flavour, and they ensure a consistency in their diet to make sure their cheese maintains that flavour. Their cheeses are handmade in small batches by the same people who look after the goats so they really know their stuff. We use their lovely soft and hard goats cheeses in our recipes to add interest and flavour.
Alan and Angela are the beating heart of Wobbly Bottom, having embarked on their cheese-making odyssey at the farm more than a decade ago. Their hands-on approach to the rearing, feeding and milking of the herd, combined with passion and skill in the dairy, make the farm and its products a force to be reckoned with.
We also use cheeses from Wodehill in Bedfordshire (who took over St Albans’ own Childwickbury goats) and Bookham & Harrison in East Sussex (who produce a very tasty Parmesan alternative) to ensure we can offer a variety of cheeses to suit different recipes.
All our cheeses are pasteurised and vegetarian.
