Pork and leek casserole

Recipe serves 2

  • 300g diced pork leg
  • 1 rasher streaky bacon
  • 1 large leek, chopped
  • 2 tbsp wholegrain mustard
  • 1/2 stock pot and 250ml water
  • 1tsp cornflour mixed with a little water
  • 1/2 apple chopped
  • 1tbsp apple cider vinegar
  • 2 medium potatoes, peeled and chunked
  • 1 turnip, peeled and chunked
  1. Brown pork pieces all over in hot oil in a heavy-based pan with a lid for around 3 minutes and set aside
  2. In the same pan add chopped bacon and leeks and stir until bacon is cooked and leeks are softened (around 5 minutes)
  3. Add stock, vinegar, flour, 1 tsp mustard and apple pieces and bring back to the boil
  4. Cover and reduce heat to lowest setting, and leave for 35-45 minutes until pork is tender.
  5. Meanwhile, boil potatoes and turnips for around 15-20 minutes until soft through. Add remaining mustard and a little butter and mash and serve with casserole.
