Paprika pork salad

  • 200g stir fry pork tenderloin
  • Ramiro pepper thinly sliced
  • 250g new potatoes (large potatoes halved if needed)
  • mixed salad leaves, washed
  • 10cm cucumber, chunked
  • 8 cherry tomatoes halved
  • Dressing (olive oil, honey, balsamic vinegar)
  • 2 tsp paprika
  • 1 clove garlic crushed
  1. Coat pork in paprika and season.
  2. Boil potatoes in salted water for approximately 15 minutes until soft. Drain and set aside
  3. Add some oil to a wok or frying pan and get nice and hot, frying the pork for 2-3 minutes until just cooked through. Set aside
  4. Add garlic and pepper and stir fry until just softened (2-3 minutes moving constantly) Leave to cool slightly
  5. Add a little olive oil to the warm pan and toss the cooked potatoes to add flavour.
  6. Arrange salad ingredients and potatoes and add pork and peppers. Add dressing and serve.
