Kale is often talked about as a superfood, but if you don’t know what to do with it, it doesn’t feel all that super! We have curly kale and black kale (Cavalo Nero) in the boxes on a fairly regular basis so here are a few tips to get the best out of it.

What’s so super?

Firstly, a little about the benefits of kale – it is packed with vitamins and minerals, particularly Vitamins K, A & C, it also has a large dose of lutein – good for eye health (who knew). High in antioxidants, fiber and calcium, the list is almost endless. So we probably ought to eat it in every meal!

Both kinds of kale work amazingly well with the salty Asian flavours so stir fries are an obvious choice, Sometimes though you do need to add a little steam to the equation if your kale is pretty robust, so you can either steam quickly first, or, stir fry and then add a splash of water and cover to achieve the same effect.

I love a salty snack with a glass of wine, and these kale crisps are great when a) I have a glut of kale or b) I don’t have any crisps in the house.

Smoothies are another way to get a real hit of raw super food. Blend the leaves with banana, carrot gand apple for an amazing morning pick me up.
