Coleslaw doesn’t have to be cabbage-heavy and drowned in cheap mayonnaise. Make your own with pretty much whatever veg you have, but make sure you use our super mild red onions as they give you that zing (without the pong). This one is a jewel of a side for sausages, grilled meat or stuck in a sandwich to liven up some soft cheese. Crunchy and good looking. Two things you don’t expect in the same sentence…
- 1 carrot
- 1 small beetroot
- 5 radish
- 1/4 of a mild red onion
- 1tbs cider vinegar
- 2tbs oil
- Grate the root veg and squeeze together to extract some of the juice (drink the juice…)
- finely slice the onion and add to the rest.
- Muddle with oil and vinegar and season.
- Leave for 10 minutes to combine and come to room temperature
